Big Train Pancake mixAug 20, 2008
By Alan Pew I was diagnosed with high triglycerides. The Nutritionist told me that I had to drastically cut my carbs. I love pancakes, but was never able to find a low carb mix that I liked. Then I found Big Train Buttermilk Pancake Mix. I love it. So do all my friends. I serve it to people who don't have any carb issues and they can't believe it's not "the real stuff". Big Train is the only pancake mix I buy now. I give it my highest recommendation.

Well, it's very low carb, so you can't expect it to be amazing, but it serves it's purpose. Gives me some pancakes when I can't normally eat them (on Atkins). I add a few frozen blueberries to mine. George Stella's pancake recipe tastes better, but these are more of a pancake consistancy.

By ChickenFriedLife I love these waffles! They are better than the full-carb waffles I used to make from scratch, and better than frozen waffles.
Mine cook up nice and crispy. I don't understand how someone could have them raw in the center unless they don't know how to cook. I brush my waffle iron with a bit of oil before cooking instead of using Pam - save the planet!
I could eat this every day!

After many disappointing low carb mixes, this one sat in the cabinet assuming it would be another artificial taste. Well I stand corrected. 2 servings (1/2 Cup mix) makes one 4-square belgium waffle. Very crisp and tasty, you will never know it is low carb. Be sure to spray the waffle maker with Pam on the top and bottom. We love these waffles. Have not tried it as pancakes, but for now it is a special treat for weekend waffles.

By Sherry I could never handle pancakes even though I liked them on occasion because I would be hungry an hour later. Now that I found I am insulin resistant I tried these with Walden Farms sugar free syrup. They are great. Because of the high protein it keeps me until the next meal. The recipe for mixing actually makes two servings so I just save the other in the refrigerator until a day or two later.
I cannot understand the reviewer who says they don't cook in the center. I have had no problem with that. In fact they cook up very fast for me.
